Why heritage tomatoes are pick of the crop
Modern varieties of tomatoes may be stronger-growing and modern breeding techniques have certainly also made them more disease resistant but Heritage - or Heirloom Tomatoes have one big advantage that we feel is so important - and that’s flavour.
Our kitchen choose to work with these varieties; they are visually appealing, can be found in a wide variety of colours - (not all tomatoes are red) as well as differing shapes and sizes. There are some strangely named varieties out there too such as Brandywine, Cherokee Purple and even Orange Banana.
We feel that our native British Heritage Tomatoes serve as the perfect complement to so many different dishes on our menus and we like to create ‘Tomato Crisps’ as a great accompaniment - simply sliced, drizzled with oil, seasoned and oven-baked to crispy perfection.
